INSTANT RAVVA DOSA

INGRDIENTS:
>>>>>>>>>>>
  1. Rice flour-3 cups
  2. All purpose flour-1 cup
  3. Sooji/Bombay ravva-1 cup
  4. Butter milk-1 cup
  5. salt-to taste
  6. Finely chopped onion-3 table spoons
  7. Ginger garlic paste-1 teaspoon
  8. Green chili paste-1 1/2 teaspoon
  9. Water-required to make batter.
  10. Oil

METHOD:

  • Mix all the ingredients in a bowl,let the batter rest for an hour.
  • Now take a pan ,apply oil,pour the dosa from end to the middle,let it cook,now flip it and add some oil,repeat the same process for all.
  • serve hot with coconut or peanut chutney

CORN CHATPATA


INGREDIENTS:

  1. Boiled sweet corn-1 cup

  2. Red chili powder-1/4Th teaspoon

  3. Nalluppu/rock salt-to taste

  4. Salt-to taste

PAPAD CHAT

Hi Priya, i am sending a snack called PAPAD CHAT for ur MEC:SAVOURY SNACK.The recipe is a quick making snack with in 10 minutes,Every one enjoy this snack,As this is colourful even kids love this snack.The recipe follows here.

INGREDIENTS:

1.Lijjat papad-6
2.Finely chopped tomato pieces-1 cup
3.Finely chopped onion-1 cup
4.Finely chopped cilantro-1/4Th cup
5.Salt-to taste
6.Red chili powder-to taste
7.Garam masala-1/4 Th teaspoon
8.Finely chopped mint-1 table spoon
9.Ghee-1 table spoon (or) Grated cheese-1/2 cup
10.Sev-1/2 cup(optional)

METHOD-

Micro wave papad for 45 seconds to 1 minute,when the papad is done keep a side.Make sure it is not burned.

Remove excess water from tomatoes.

Now take a bowl mix all the ingredients ,except ghee/cheese

Now spread this mixture on the papad and serve immediately.

NOTE:If u use ghee for this recipe,spread the ghee on the papad first,then put the tomato mixture

If u use grated cheese,just sprinkle on the top.U can use any one of this according to taste.

KATTEPONGALI

INGREDIENTS:

  1. Rice-2 cups

  2. Moongdal/pesar pappu-1 cup

  3. Ghee-3 tablespoons

  4. Sugar-1/4 Th teaspoon

  5. Chopped ginger-1/2 teaspoon

  6. Cashewnuts fried-1 tablespoon

  7. Jeera powder-1/4Th teaspoon

  8. Salt-to taste

  9. Pepper/miriyalu-8

  10. Pepper powder-1/8Th teaspoon

  11. Jeera-2 spoons

METHOD:



  • Cook rice and moongdal together by adding 6 1/2 cups of water,add more if u want more liquid consistency.,when water starts boiling,take 1 cup from that and keep a side,then cook rice for 15 minutes on low flame.

  • Now take a deep bottomed pan,add ghee,when it heats add pepper,jeera,ginger,cashews,jeera powder and pepper powder.,fry well,now add the 1 cup of water which we put a side,now add the rice,and salt ,cook for few minutes.Serve hot.

ONION LEMON RICE

INGREDIENTS:

  1. Basmathirice-2 cups
  2. Onion chopped-3 tablespoons
  3. Cilantro-2 teaspoons
  4. Chopped green chis-1 tablespoon
  5. Lemon juice-2 tablespoons
  6. Salt-to taste
  7. Turmeric-1/2 teaspoon
  8. Oil -for seasoning

SEASONING:

  1. Mustard seeds-1/4 Th teaspoon
  2. cumin seeds-1/2 teaspoon
  3. Sesame seeds-2 teaspoons
  4. Peanuts-2 tablespoons
  5. Curry leaves-8

METHOD:

  • Boil 2 cups of basmathi rice with3 cups of water,and add 5 to6 drops of oil,when done cool it,and keep it a side.
  • Now take a pan add oil,and do seasoning,add green chili's,fry well and add onion,saute till onion turns to brownish colour,now add salt and turmeric and cilantro,mix well.
  • Now transfer this to cooled rice ,add lemon juice mix well and serve.

MEENAKSHI VADA

Meenakshi vada are fragrant split pea fritters with cashew nuts,the recipe as follows.
INGRREDIENTS:

  1. Yellow split peas-1 cup
  2. Hot water-3 cups
  3. Chopped ginger-1 1/2 teaspoon
  4. Chopped green chili's-2
  5. all purpose flour-2 tablespoons
  6. Salt-to taste
  7. Chopped red onion/shallots-1/2 cup
  8. Roasted cashews/kaju-1/2 cup
  9. Dried curry leaves-12
  10. Oil-for deep frying

METHOD

Soak peas in water for 3 hours,drain the water,now to this peas,add ginger,chili's,flour,salt,water.Grind smoothly .

Mixture should not be neither too coarse,nor too smooth,it should be of medium consistency,add remaining ingredients and deep fry in oil.

Serve hot.

MILK POWDER,COCONUT LADDU

INGREDIENTS:

  1. Fat free milk powder-1 cup
  2. Dry coconut powder-1 cup
  3. Sugar powder-1 cup
  4. Tooty frutis in 3 different colours-1 table spoon(optional)
  5. Ilaichi/cardamom powder- 1/2 teaspoon
  6. Milk- 2-4 spoons

METHOD:

Mix all ingredients in a bowl,and make laddu's.

Instant sweet item,just made in 5 minutes.Looks great,and tastes delicious.

SPICY LASSI

INGREDIENTS:

  • Curd -2 cups
  • salt-to taste
  • ice cubes-1 cup
  • cardamom-2
  • dhaniya-12
  • pepper-2
  • cilantro-1 spoon

METHOD:

First grind curd,salt and ice cubes,add water then make lassi

Now dry roast the spice ,and grind to a fine powder.

Mix the spice powder,cilantro to the lassi and serve.

SORAKAYA KOFTA CURRY

INGREDIENTS:

FOR KOFTA'S:
  1. sorakaya/bottlegourd-1 medium
  2. Besan/chikpea flour-75gm
  3. Green chili's chopped-6
  4. Cilantro-1/2 bunch
  5. Lime-1/2 piece

FOR GRAVY:

  1. Onion-100gms
  2. Ginger garlic paste-1 teaspoon
  3. Dhaniya powder-1 teaspoon
  4. Poppy seeds/ghusghus-20 gms
  5. Dry coconut powder-30gms
  6. Tomatoes chopped-100 gms
  7. Curd-1 cup
  8. Chili powder-2 teaspoons
  9. Turmeric-1/8 Th spoon
  10. Salt-to taste
  11. Oil

METHOD:

Peal the skin of bottle gourd,grate finely,sprinkle some salt on this ,let it rest for 15 minutes,press hard to remove water from the pieces.

In a pan ,heat oil,now add chilli's, besan,fry until nice aroma comes out,now add bottle gourd paste,add lime juice to this mixture.

Make into round balls,and deep fry in the oil.

METHOD FOR GRAVY:

Heat oil in a pan,add chopped onion,fry till it changes to a nice golden colour,now add ginger garlic paste,and tomatoes,coconut powder,coriander powder,ghus ghus paste,curd,red chili powder,salt and turmeric.Boil it on a low medium flame,cook until the gravy thickens,when its done add kofta's and garnish with cilantro.Serve hot

CHILI GARLIC SAUCE

INGREDIENTS:

METHOD:

  1. Soak red chili's in water for half an hour,then boil for one minute.
  2. Grind to a fine paste along with garlic.
  3. Tastes really spicy.

WONTONS

INGREDIENTS;

  1. All purpose flour/maida-2 cups
  2. ghee/unsalted butter-2 table spoons
  3. salt-to taste

STUFFING:

  1. Boiled noodles-1 cup
  2. Grated carrot-1 cup
  3. Chopped onion-1 cup
  4. Chopped cabbage-100 grams
  5. Spring onions-1/2 cup
  6. Soya sauce-1 teaspoon
  7. Tasting salt-1/2 teaspoon
  8. Salt-to taste

METHOD:In a pan roast all purpose flour,then make dough by adding salt,ghee and warm water.Let the dough rest for 30 minutes

Take a pan add oil and heat it,now to this add cabbage onion,and tasting salt,fry well.Then add noodles,soya sauce,salt.Mix well,cook until done

Now divide the dough into small portions,take a portion,roll like chapathi,stuff the noodles,close all the edges,then again roll like chapathi,and deep fry in the oil.

Repeat the process to the remaining portions.

Serve hot with chili garlic sauce.

Hello Friends today i want to discuss briefly about nutrition, and its importance and fatty food and its harm ness: in day to day life activities,nutrition plays a prominent role ,the basic idea of posting this issue is we all should know some points regarding nutrition.As a homemaker we all got responsibility to keep watch on our family members about their health.

One of the main reason for gaining weight is eating fast food which includes high calorie food,fat food(saturated fat,trans fat)3o% of calories in the basic healthy diet are fat,only 10% of this is saturated fat.
Saturated fat predominates in fat on meat,poultry eggs,milk,cheese,yogurt,butter,and drippings

Is also found in many vegetable oils,soft margarine's,fatty fish,nuts and seeds,whole grain cereals and some vegetables and legumes.
"As u eat less saturated fat,the proportion of this in your diet automatically increases,this is good and medically helpful" etc.,So we always should avoid eating food which contains saturated fat

BAMBINO DOSA

METHOD:

Soak bambino in butter milk for an hour,late add remaining ingredients and mix well

Add if more water is needed.

Pour dosa's on hot tawa, Roast on both sides and serve hot with chutney.

VULLIPAYA KOBBARI KARAM

INGREDIENTS:

UGADI PACHADI


Hello every body wish u all a HAPPY UGADI".Ugadi marks the beginning of a new Hindu lunar calendar with a change in the moon’s orbit. It is a day when mantras are chanted and predictions made for the new year.The 2009 ugadi is called as "VIRODHINAMA UGADI".
Traditionally, the panchangasravanam or listening to the yearly calendar was done at the temples or at the Town square. The celebration of Ugadi is marked by religious zeal and social merriment. Special dishes are prepared for the occasion. In Andhra Pradesh, eatables such as "pulihora", "bobbatlu" and preparations made with raw mango go well with the occasion especially "UGADI PACHADI" made with different combinations ,which includes "SHAD RUCHULU".the tradition of making this recipe as been followed from many years.
The Ugadi day begins with ritual showers(oil head bath) followed by prayers, and then preparing, eating of a specific mixture called “Ugadi Pachadi” which is the mixure of the following.

GARLIC SAUCE

INGREDIENTS:

  1. Tomato sauce-2 table spoons
  2. Corn flour-2 table spoons
  3. Chopped garlic-2 spoons
  4. Spring onions-1/2 cup
  5. salt and red chili powder-1/2 teaspoon
  6. Sugar-pinch
  7. Oil-1/2 table spoon
  8. water-1 1/2 cup

METHOD:

Heat oil in a pan then add garlic and fry to light brown.

Take 1/2 table spoon of cornflour and add 1 1/2 cup of water mix well and add this mixture to the pan and boil well.

When they starts boiling add tomato sauce , salt and chili powder,now the gravy starts thickening,if it's more thick then u can make it diluted by adding extra water,finally add sugar and spring onions.

SWEET AND SOUR VEGETABLE

INGREDIENTS:

  • Chopped capsicum-1/2 cup
  • Chopped french beans-1/2 cup
  • tomatoes chopped finely-1/2 cup
  • finely chopped onions-1/2 cup

  • tomato sauce-2 table spoons
  • soya sauce-1 spoon
  • salt-to taste
  • chopped garlic-1 spoon
  • panneer cubes-10
  • cauli flower-1/2 cup

METHOD:

half boil the vegetables(carrots,beans,capsicum,cauliflower,peas),fry the panneer cubes and keep a side.Add some water to corn flour and make a thick paste.

Take a pan add oil,when it heats add garlic and onion,saute well,now add the boiled vegetables,add salt,fried panneer cubes fry well,

now add all the sauces and saute well.then add tomato pieces stir well,cook for few minutes,add corn flour paste,when gravy starts thickening add spring onions and garnish with cilantro.

Serve hot fried rice ,which tastes delicious

HOMEMADE PANNEER

INGREDIENTS:



panneer also known as cottage cheese, lot of tasty recipes are made with panneer,home made panneer is good for health. i want to share with u, how to make homemade panneer,its very easy to make .

Ingredients:


1.milk-3 1/2 litres(2%)

2.lemon-2 to 3

Process:


1.take a pan, add the milk and heat,when milk starts boiling add lemon juice,when milk starts curdling put off the stove.now take a muslin cloth

2.pour that milk in this cloth,run tap water on panneer,this helps in loosing lemon smell,

3.and knot the cloth tightly and press firmly to remove excess water.

4.hang that for 1 hour.

5.now remove the panner,u can feel that it is dry.

6. on a tray place this panner and make evenly(flat all over).

7.now put some heavy object on that panneer and live for 4 to 5 hours.

8.then remove the heavy object,you can see hard panneer,

9.cut into small cubes or the size u want and freeze.

10.defrost and use when ever u want.

take a pan add oil,add cumin and carom seeds,and few curry leaves.now add onion,saute well until it turns to light brown,now add chopped tomato,pepper powder,salt ,meal makers,turmeric.
cook until meal makers absorb the juices,now add cooked rice.saute well,finally add lemon juice and garnish with cilantro.

CHINESE FRIED RICE

METHOD:

cook jasmine rice and allow it to cool.

take a pan ,roast broccoli and onion by adding 2 teaspoons of oil,keep a side.

Now take a pan add oil,when oil heats up,add minced garlic and fry well,now add roasted vegetables i.e; broccoli and onion,then add some spring onions and saute well,now add soy sauce,chili oil,salt,pepper powder,fry well.Now add rice cook for few minutes,then garnish with spring onions,serve hot.

MASALA DOSA

INGRIDIENTS

DOSA BATTER: Rice- 2 1/2 cups
Urad dal/minappappu-1 cup
Fenugreek seeds/menthulu-1/2 teaspoon
METHOD

Soak rice,urad dal and fenugreek seeds in water for 6 hours,then grind to a fine batter, add salt to the batter and mix well,allow to ferment for 8 hrs.Now the batter will be ready to make dosa's.

MASALA: chopped onion-1 no
tamarind paste-1/2 spoon to one spoon
red chili powder-1 tea spoon
turmeric-a pinch
salt-to taste
METHOD: Grind all the ingredients coarsely ,not much

ALU CURRY: Boiled potatoes-2
onions-2 table spoons
slitted green chillis-3
cilantro-2 teaspoons
turmeric-1/8 th teaspoon
ginger garlic paste-1/2 teaspoon
salt-to taste
cumin seeds-1/4 th teaspoon
mustard seeds-1/4 th teaspoon
urad dal-1/2 tea spoon
chana dal-1/4 th teaspoon
curry leaves-1 string
oil-tea spoons


METHOD: Peal the skin of potato and make into fine pieces.now make seasoning in a pan ,now add green chili's and onions,when onion gets fried ,add ginger garlic paste,stir well,when it cooks garnish with cilantro.

METHOD TO PREPARE DOSA:

Take dosa pan and heat it,sprinkle some water all over pan,when the water evaporates,pour a ladleful of batter on the pan,spread in a circular motion as thin as possible,now spread masala all over the dosa,now add some ghee ,when the dosa roasts well ,put the curry in the middle,role the dosa like cylinder,put some butter on the top and serve hot.

PEANUT PAKORA

INGRIDIENTS:

  • Peanuts- 2 cups
  • ginger garlic paste-1/4 Th teaspoon
  • besan powder-1 1/2 cup
  • red chili powder- 1 1/2 tea spoon
  • salt-to taste
  • butter-1/2 tea spoon
  • dhaniya powder-1/2 tea spoon
  • water
  • oil-for deep frying

METHOD

mix all the ingredients ,add little water as such the batter should coat the peanuts,

Drop pakora's in oil with a spoon,and deep fry.

VEGETABLE BULLETS

INGRIDIENTS:

  1. Finely chopped carrots-3 table spoons
  2. finely chopped beans-3 table spoons
  3. Finely chopped cabbage-3 table spoons
  4. Chopped cilantro-1 table spoons
  5. Pepper powder-1/4 teaspoon
  6. salt-to taste
  7. soya sauce-2 teaspoons
  8. chili sauce-2 teaspoons
  9. Corn flour-2 table spoons
  10. Bread crumbs/bread powder-1 cup
  11. tasting/china salt-2 pinch
  12. Ginger garlic paste-1/4 Th teaspoon
  13. Oil-for frying

METHOD

take a pan add 2 teaspoons of oil,add ginger garlic paste,stir well now add boiled vegetables,cook until done,add soya sauce,chili sauce, pepper powder,tasting salt,salt,cook for 4 minutes,now garnish with cilantro.Allow it to cool.

Now mix corn flour with water ,just to make it liquid.

now take a spoon of curry which we prepared, and shape it like bullet,now dip this bullet in corn flour liquid and coat it finally in bread crumbs.F

Deep fry in oil on medium flame until it turns to nice golden colour,and serve hot with tomato ketchup

SPROUTED MOONG CONE CHURMURE


INGREDIENTS:


  1. Biscuit cones-5

  2. sprouted moong-1 cup

  3. finely chopped mint-1 teaspoon

  4. finely chopped onion-1 table spoon

  5. finely chopped tomato-1 table spoon

  6. black salt-2 pinch

  7. salt-to taste

  8. red chili powder-1/8Th teaspoon

  9. lemon juice-1/4 Th teaspoon

METHOD:


Mix all ingredients in a bowl and fill in the cones


kids can enjoy this kind of serving.


Eating raw food is good for health,but it is difficult for elders to make the kids to eat this kind of food,so we have to think differently to make kids to eat healthy food by trying recipes differently.So i made this recipe in my way.Doctors advice us to maintain healthy diet by having nutritious food such as raw food ,boiled vegetables,fruits,cereals etc., everyday.So i think u like this recipe.
