BAINGAN TAMATAR KI SABJI

INGREDIENTS:

  1. Chopped onion-1/2 cup
  2. Chopped brinjal-1 cup
  3. Chopped tomato-3/4Th cup
  4. Cilantro-2 table spoons
  5. Red chili powder-1 teaspoon
  6. Salt-to taste
  7. Garam masala-2 teaspoons
  8. Turmeric-pinch
  9. Ginger garlic paste-1/2 teaspoon
  10. Oil-3 table spoons
  11. Cumin and mustard-1/2 teaspoon
  12. Curry leaves-4




METHOD:

  1. Heat oil in a pan and make seasoning

  2. Add onions and fry well

  3. To this add ginger garlic paste and brinjal

  4. Fry till brinjals gets half cooked

  5. Now add tomato pieces and cook until done

  6. Now add turmeric,red chili powder,garam masala powder,salt

  7. Garnish with cilantro

  8. Goes well with rice and pulka

PALAKURA PULUSU (SPINACH AND BRINJAL COOKED IN TAMARIND GRAVY)

INGREDIENTS:

  1. Spinach-1 full bunch
  2. Brinjal chopped1/2 cup
  3. Chanadal -5 table spoons
  4. Tamarind paste-2 to 3 teaspoons
  5. Green chili paste-1 to 2 teaspoons
  6. Turmeric
  7. Oil-1 table spoon
  8. Cumin and mustard-1 teaspoon
  9. Fenugreek/methi seeds-1/8Th teaspoon
  10. Hing-2 pinches
  11. Dry chilis-2 to 3





METHOD:

  1. Pressure cook chanadal for 4 to 5 whistles or until done

  2. Heat oil in a pan and add cumin,mustard,methi seeds,dry chili's and hing

  3. Add brinjal pieces and saute for 5 minutes and add spinach leaves and cook until done

4. Now add the green chili paste,turmeric,salt and tamarind paste

5. Once it gets nicely cooked add boiled chanadal and some water.Cook until done

6. Enjoy with rice

BROCCOLI ALU SABJI

INGREDIENTS:

  1. Chopped alu/potato-1cup
  2. broccoli crowns-1 full
  3. Chopped onion-4 table spoons
  4. Turmeric-1/8th spoon
  5. Salt-to taste
  6. Red chili powder-1/2 teaspoon
  7. Dry grated coconut-2 teaspoons
  8. Oil-1 teaspoon
  9. Cumin and mustard-1 teaspoon




METHOD:

  1. Heat oil in a pan and make seasoning

  2. add onion and fry well,then add broccoli florets,fry for 4 minutes and set them a side

  3. now take another pan and add oil and potato pieces fry till brown and add some water

  4. Cook till done ,to this add broccoli mixture,powders and salt

  5. Enjoy with rice or chapathi

BEANS FRY WITH ROASTED CHANADAL POWDER

INGREDIENTS:

  1. Frozen beans -1 pack
  2. Roasted chanadal/putnalu/puttukadalai-4 teaspoons
  3. Salt-to taste
  4. turmeric-pinch
  5. Garlic pod-1/2
  6. red chili powder-1/4th teapoon
  7. desicated coconut-2 teaspoons
  8. Urad dal-4 teaspoons
  9. cumin and mustard-1 teaspoon
  10. Oil-5 teaspoons
  11. curry leaves-few





METHOD:

  1. Heat oil in a pan and make seasoning

  2. Add beans and fry till tender,close lid and saute in middle

  3. blend roasted chanadal,red chili powder,coconut,garlic and salt

  4. Add to curry along with 2 teaspoons of oil,adjust salt

  5. Sprinkle desiccated coconut and Enjoy with steamed rice
