Meenakshi vada are fragrant split pea fritters with cashew nuts,the recipe as follows.
  1. Yellow split peas-1 cup
  2. Hot water-3 cups
  3. Chopped ginger-1 1/2 teaspoon
  4. Chopped green chili's-2
  5. all purpose flour-2 tablespoons
  6. Salt-to taste
  7. Chopped red onion/shallots-1/2 cup
  8. Roasted cashews/kaju-1/2 cup
  9. Dried curry leaves-12
  10. Oil-for deep frying


Soak peas in water for 3 hours,drain the water,now to this peas,add ginger,chili's,flour,salt,water.Grind smoothly .

Mixture should not be neither too coarse,nor too smooth,it should be of medium consistency,add remaining ingredients and deep fry in oil.

Serve hot.
