CHATPAT GOBI(MICROWAVE COOKING)

I was boring to cook the veg filling with mixed vegetables and also with potato,I thought of cooking by using gobi florets and tried this recipe in Indo-Chinese style , it came very perfect and delicious.As this is a base recipe which can be used to fill as a tortilla wrap, samosa or spring roll filling or even served with a hot dog bread filling or as a side dish or even used to make simple gobi fried rice.The quantity before cooking looks bulk,but after microwaving it reduces to half the quantity.If you are mild spice eater,reduce the spice quantity for better taste

INGREDIENTS:
  1. Cauliflower florets/gobi florets-1 big head
  2. Onion very finely chopped-3 tbs
  3. Finely chopped spring onion greens-3 tbs
  4. Curd-1/2 cup
  5. Tandoori masala-1/2ts
  6. garam masala-1/2 ts
  7. dhaniya powder-1/2 ts
  8. Paprika-1/4th ts
  9. Kasurimethi-1/4th ts crushed finely
  10. Tomato ketchup-3tbs
  11. soy sauce-2 ts
  12. Salt-to taste
  13. coriander leaves-3 tbs
  14. Ginger garlic paste-1/2 ts
  15. oil-2 1/2 tbs
  16. Red chili flakes-1/8th ts
ANDHRA RUCHULU-CHATPAT GOBI
METHOD:
  1. In a deep microwave safe bowl combine all ingredients and mix with a spatula
  2. add some more curd if necessary
  3. add florets,onion,coriander leaves mix and let it marinate for 2 hours
  4. Now put this bowl in microwave cook till gobi becomes more tiny and crunchy
  5. This takes approximately 15 to 20 minutes
  6. Try to mix in between for every 5 minutes which helps to cook evenly
  7. I tried this as a indo-chinese way to give better taste,and please remember add the ingredients of your choice.As we eat more spicy food I added more quantities of spice powders
  8. This is a kid friendly recipe

STIR FRIED SESAMAE BEANS

INGREDIENTS
  1. French beans blanched - 2 cups
  2. Finely chopped garlic-1 tbs
  3. Roasted sesame seeds-3 ts
  4. Butter-2 ts
  5. Coriander leaves-3 ts
  6. Black pepper powder-1/8th ts
  7. Honey-1/8th ts
  8. Salt-to taste
ANDHRA RUCHULU-STIR FRIED BEANS
METHOD:

  1. Heat butter in a pan add sesame seeds garlic and fry till light brown
  2. Add beans pepper powder salt coriander leaves toss and serve
  3. sprinkle honey and serve

SPAGHETTI WITH TOMATO SAUCE-INDO CHINESE STYLE

INGREDIENTS:
  1. Spaghetti -1/2 pack
  2. Tomato can -1
  3. Tomato ketchup-2 tbs
  4. garlic black pepper crushed paste-1/4th  ts
  5. Green chilis-1 ts
  6. Blanched veggies-1/4th cup(bell pepper,beans,carrots)
  7. Soy sauce-2 ts
  8. Salt-to taste
  9. Oil-1 tbs
  10. Coriander leaves-3 tbs
ANDHRA RUCHULU-SPHAGETTI WITH TOMATO SAUCE
PREPARATIONS:
  1. Coat the wok with oil  fill with water and boil,now add the spaghetti and cook according to instructions.when they are done run cold water and Set side
  2. Blanch veggies  and set a side
METHOD:
  1. Heat oil in a pan add crushed garlic and pepper paste saute for 2 seconds
  2. add chilis and onions fry for a minute add blanched veggies sauces,coriander leaves  salt one after other
  3. Cook to saucy consistency add very little water mix
  4. when water starts boiling add strained spaghetti mix and serve immediately with tomato ketchup
  5. The mixture should completely coat with the spaghetti then oil it tastes good
  6. sure the kids will really like this recipe

SCHEZUAN FRIED RICE

INGREDIENTS:

  1. Rice-3cups
  2. Finely chopped carrot-1/4th cup
  3. Finely chopped beans-1/4th cup
  4. Finely chopped capsicum-1/4th cup
  5. Finely chopped onion-1/4 th cup
  6. Finely chopped spring onion greens-4 tbs
  7. finely chopped coriander leaves-2 tbs
  8. Tomato ketchup-1 tbs
  9. Red chili sauce-2ts
  10. Soy sauce-1 ts
  11. Chopped baby corns -1o
  12. Ajnomoto-pinch
  13. Pepper powder-1/8th spoon
  14. Salt-to taste
ANDHRA RUCHULU-SCHEZUAN  FRIED  RICE
PREPARATIONS:
  • Cook rice 1  and 1/2 cup proprtions of water to each cup of rice
  • Cool and separate into granis
METHOD:
  • Heat 2 tbs of oil in a wok add onions and all veggies fry till half done
  • now add all the sauces and salt.Mix rice and spring greens and coriander leaves mix well and serve

CABBAGE MANCHURIAN

INGREDIENTS:
  1. Chopped cabbage-1 whole
  2. Grated carrot-1
  3. Cooked rice -1/2 cup
  4. corn starch-2 to 4 tbs
  5. Soy sauce-1 ts
  6. Ginger garlic paste-1ts
  7. Chili paste(green chili)-1 ts
  8. Salt-to taste
  9. Pepper powder-1/4th ts
  10. Oil-for deep frying
FOR MANCHURIAN SAUCE:
    • Minced garlic-2 ts
    • minced ginger-2 ts
    • Soy sauce-1 tbs
    • Red chili sauce-1 ts
    • Finely chopped chili's-2 ts
    • Tomato ketchup-1 tbs
    • Black peppers crushed-1/4th ts
    • Corn starch-2 tbs
    • Finely chopped onion-1/4th cup
    • Spring onion greens-1/2 bunch chopped
ANDHRA RUCHULU-CABBAGE MANCHURIAN
PREPARATIONS:
  1. Blanch cabbage along with  grated carrot strain water and use this stock while making sauce
  2. Squeeze  excess water from cabbage, water should be removed completely 
METHOD FOR MAKING CABBAGE MANCHURIAN BALLS:
  1. Mix all the ingredients in a bowl along with blanched cabbage make balls and deep fry,if you feel they are cracking add Little corn starch in the mixture and make balls
  2. Now for making the sauce heat 2 tbs of oil in a pan and add the ginger and garlic pieces
  3. When they turn brown add chili's and fry
  4. Add onions and cook till they turn translucent
  5. Add sauces,pepper [powder little salt spring onion greens and cilantro mix well
  6. Add corn starch paste(dilute corn starch with some water)
  7. Immediately add Manchurian balls and mix thoroughly
  8. Sprinkle some coriander and serve immediately
TIP:
If you have party or any occasion you can make balls 3 to 4 days before and can freeze
On the day of party you  remove them from freezer and micro wave for a minute or couple of minutes and then just prepare the sauce and add this Manchurian balls and cook.
 This helps to save the time,and a good appetizer can be made in few minutes,Hope you would all enjoy this recipe

VEG NOODLES IN GARLIC SAUCE

INGREDIENTS
  1. Boiled noodles-1/2 cup
  2. Diced Veggies-1 cup
  3. Diced onion-2 tbs
  4. Soy sauce -1 ts
  5. tomato ketchup-2 tbs
  6. Red chili sauce-1ts
  7. Chopped ginger and garlic-1 ts each
  8. Oil-2 tbs
  9. corn starch made to fine paste-2 tbs
  10. Chopped spring onion greens-3 tbs
  11. Chopped coriander leaves-2 tbs
ANDHRA RUCHULU-VEG NOODLES IN GARLIC SAUCE
METHOD:
  • Heat oil in a pan add garlic and ginger and fry till light brown add onion and mixed veggies cook till half done(bell pepper,cabbage,beans,carrots)
  • Add sauces,some water and mix well
  • when water starts boiling add corn starch paste(add more water to this paste) mix till it thickens
  • Add leaf greens pepper powder salt and serve hot
  • this should bed pouring consistency like a soup
  • best choice to be served as a starter

CHINESE VEG SPRING ROLLS

INGREDIENTS:
  1. TYJ sprinroll sheets-8 to 10
  2. Chopped bell pepper-1/2 cup
  3. Onion chopped-3 tbs
  4. Chopped carrot-1/4th cup
  5. Finely shredded cabbage-3/th cup
  6. Sprin onions chopped-3 tbs
  7. Soy sauce-2 ts
  8. Pepper powder-1/2 ts
  9. Salt-to taste
  10. Olive oil-2 ts
METHOD:

CHINESE VEG SPRING ROLLS
  • Heat oil in a wok add spring onions,onions,veggies toss out and cook for 3 min
  • add salt,sauce andpepper powder and cool
  • Wet the springrol sheets by sprinkling lil water and spread with your hands
  • Put the filling and close the edges and roll and close tightly and press
  • Wetting the sheets helps to stick the roll properly
  • Deep fry the rolls and serve
  • If you making many ata time put the rolls on a damp cloth,because they should not dry orelse the filling separates in the oil

BABYCORN MAJESTIC

INGREDIENTS:
  1. Canned baby corn-1 can
  2. All purpose flour-3 tbs
  3. Corn starch-2 tbs
  4. Pepper powder-1/8th ts
  5. Salt-to taste
  6. Red food color-pinch
  7. Chopped onion-4tbs
  8. Slitted chilis-4
  9. Chopped garlic-4tbs
  10. Tomato ketchup-1 tbs
  11. Oil-for deep frying
PREPARATIONS:
  1. Wash baby corns and make 2 halves straightly
  2. Microwave for 1 minute with some water
  3. Drain and set a side
  4. Mix flours,salt,pepper powder some water and make batter of medium consistency
METHOD:
ANDHRA RUCHULU-BABYCORN MAJESTIC
  1. Heat oil in a frying pan and Dip baby corn in batter and deep fry till crisp,set a side on a paper towel to absorb excess oil
  2. Now heat 1 tbs of oil in another pan add garlic and green chilis,saute till chilis turns crisp
  3. Now add onion ,food color,tomato ketchup and salt mix thorowly
  4. Finally add fried baby corn and coriander leaves
  5. Mix and serve

GOBI MANCHURIAN WITH TOMATO FLAVOUR

INGREDIENTS:

  1. Gobi florets-2 cups
  2. Maida-4 spoons
  3. Corn starch-2 1/2 spoons
  4. Salt-to taste
  5. Green chilis chopped-1 to 2 teaspoons
  6. Chopped garlic-2 teaspoons
  7. Tomato ketchup-1/2 cup
  8. Spring onions-4 table spoons
  9. coriiander leaves-2 teaspoons
  10. Oil-for deep frying





ANDHRA RUCHULU-GOBI MANCHURIAN WITH TOMATO FLAVOUR
METHOD:

  1. In a bowl mix corn flour,maida,salt,1 table spoon of hot oil and little water,batter should be of medium consistency

  2. Dip the gobi florets in batter and deep fry in oil,and set a side

  3. heat 3 teaspoons of oil add garlic,onion and fry well.

  4. Now add spring onions and saute for 2 minutes,add tomato ketchup and some water
5.Cook for 3 minutes and add the fried manchurian,sprinkle coriander leaves ,Mix well and serve hot

BABYCORN 65

INGREDIENTS:

  1. Baby corns-1 tin
  2. Besan/chik pea flour-1 table spoon
  3. Maida/all purpose flor-1 table spoon
  4. Corn starch-1 table spoon
  5. Salt-to taste
  6. Red chili powder-1 teaspoon
  7. Oil-for deep frying
  8. Ginger garlic paste-1 teaspoon
  9. Pepper powder-1 teaspoon
FOR SEASONING
  1. Oil-1 table spoon
  2. Curry leaves-15 to 20 leaves
  3. Tomato ketchup-1 table spoon


METHOD
  1. Boil baby corns in water for 10 minutes,strain and cool
  2. To this add all flours,ginger paste ,red chili powder,salt and pepper powder
  3. And mix well with hands and deep fry
  4. Now heat oil in a pan and add minced garlic,curry leaves, fried corns and ketchup
  5. Baby corn 65 is ready to serve

VEGETABLE MANCHURIAN

Veg manchurian is an authentic chinese dish famous all over,it is made with different veggies and also in different flavours,its basically two kinds, one is the saucy manchurian balls and another is the dry one.Both can be done with little variation.Today i am sharing dry manchurian.
INGREDIENTS:

  1. Finely chopped beans-1 cup
  2. Finely shredded cabbage-1 cup
  3. Finely grated carrot-1 cup
  4. Finely chopped green bell pepper-1 cup
  5. Chopped spring onions-1 cup
  6. Corn flour-1 cup
  7. Maida/all purpose flour/self rising flour-1/2 cup
  8. Ginger garlic paste-22 teaspoons
  9. salt-to taste
  10. Pepper powder-1 teaspoon
  11. Green chili paste-1 table spoon
  12. Soy sauce-2 to 3 table spoons
  13. Tomato ketchup-2 table spoons
  14. Minced garlic-1 table spoon
  15. Finely chopped green chilis-1 table spoon
  16. Cilantro-3 table spoons

METHOD:

  • In a bowl mix all the veggies and set a side
  • Mix corn flour,maida,pepper powder,green chili paste,pepper powder and salt in another bowl.
  • Now take a bowl add some veggies ,and sprinkle flour mixture little and make tiny balls and deep fry.
  • then repeat the same procedure for remaining batches,
  • I do prefer because the crispy ness of balls comes out very evenly,if you mix all together at one time water from veggies comes out and makes maida more elasticity and while the balls are fried they will break in the oil.
  • So always do according to batches,it will be evenly cooked and remains crisp all over the time.
  • When all balls are fried in oil,set them on a napkin.
  • Now heat a pan with 3 tablespoons of oil,and add garlic fry well,now add chili's,then
  • Add spring onions,tomato ketchup and soy sauce.
  • Once the gravy cooks well add the fried balls,toss until they get coated.
  • Garnish with cilantro and serve hot

VEGGI SPRING ROLLS

INGREDIENTS:

  1. Springroll sheet pack-1
  2. Mixed veggies(carrot , peas,capsicum)-1cup
  3. Shredded cabbage-1 cup
  4. Green chili sauce-2 teaspoons
  5. Ginger garlic paste-1/2 teaspoon
  6. Amchoor/dry mango powder-1/2 teaspoon
  7. Salt-to taste
  8. Soysauce-1 teaspoon
  9. Tasting salt/china salt- 2 pinches
  10. Finely chopped cilantro-1 table spoon
  11. Oil-for frying
METHOD:

  • Boil water in deep bottomed vessel,add the veggies then close the lid.Cook on low-medium flame for few minutes.
  • Strain the veggies ,squeeze excess water with a damp cloth,make sure their is little moisture content in the veggies.
  • Now add the remaining ingredients to the veggies and mix well.
  • Now take each spring roll sheet ,stuff 2 teaspoons of filling,Roll out,seal out the edges with egg wash or water.
  • Deep fry in oil until light golden brown.
  • Enjoy with sour cream.
  • Roll out acording to picture instructions shown in the sheet.
