RICE FLOUR AND DAL MURUKU

INGREDIENTS:
  1. Rice flour-4 cups
  2. Roasted chenadal powder-1 cup
  3. Moondal-3 tbs
  4. Urad dal-3 tbs
  5. Hing-2 pinches
  6. Cumin -1 ts
  7. Sesame seeds-1/2 cup
  8. Salt-to taste
  9. Hot oil-1 cup
  10. Oil-for deep frying
ANDHRA RUCHULU-MURUKU
PREPARATION :
  1. Make  dals in a blender to fine powder add water and make fine paste
  2. In a mixing bowl add all the flours,dal paste ,hing,sesame seeds, cumin salt,hot oil required amount of water and make soft dough
  3. Make into portions ,take each portion and put into a muruku maker and press in hot oil
  4. Fry both sides in hot oil

MURUKU

INGREDIENTS:
  1. Rice flour-4 cups
  2. Roasted chandal powder-3/4th cup
  3. Uraddal powder-1/4th cup
  4. Hing
  5. Salt-to taste
  6. Sesame seeds-fist full
  7. Hot oil-2 to 3tbs
  8. Oil-for deep frying
METHOD:

ANDHRA RUCHULU-MURUKU
  1. In a mixing bowl mix flours,hing ,salt,3tbs oil,hot water,sesame seeds mix well and make soft and stiff dough
  2. Divide the dough into portions
  3. Put each portion of dough in muruku maker and gently press in hot oil
  4. Fry till crisp
  5. Drain out excess oil by placing on a paper towel
  6. When muruku cools store in a dry  airtight container by this muruku remains fresh for long time

VADAPPALU(SAVORY SNACK)

INGREDIENTS:
  • Rice flour-2 cups
  • All purpose flour-2 tbs
  • Sesame seeds-3 tbs
  • Green chili paste-3 tbs
  • Soaked chandal-3 tbs
  • Soaked moong dal-3tbs
  • Salt-to taste
  • curry leaves finely chopped-3 tbs
  • Coriander leaves finely chopped-5tbs
  • Oil-for deep frying
things needed to make vadappalu
  • Tortilla press
  • Plastic sheets-4
METHOD:
VADAPPALU
  1. In a bowl mix all the ingredients and pour required amount of hot water to make soft and stiff dough
  2. Now separate the dough into small lemon size balls
  3. Now take the tortilla press,apply oil to the sheets
  4. Place one ball in between the two sheets and put in the tortilla maker and gently press
  5. Slowly remove carefully and place in the hot oil
  6. Fry till golden brown to crisp
  7. Repeat the same process for remaining dough balls
  8. Cool and sote in airtight container
  9. Crispy and tasty vadappalu are ready to serve

SESAME SEED MURUKU

INGREDIENTS
  1. Besan-1/2 cup
  2. Rice flour-1cup
  3. Sesame seeds-1/2 cup
  4. Melted butter-1 tbsp
  5. Red chili powder-1 teaspoon
  6. Salt-to taste
  7. Ajwain/carom seeds/vamu-1/8Th teaspoon
  8. Oil-for deep frying
  9. Hot water-as required to make dough


METHOD
  • Mix all ingredients and the butter mix gently with hands
  •  Now add hot water  and mix with spatula,
  • dough should be soft and firm
  • Now take the muruku maker and fill the dough
  • I used foil paper to make circles
  • Now place them in hot oil
  • Fry on medium flame to get nice brown color,and even frying
  • Cool and store them in dry container
  • Kids will enjoy this muruku,

RIBBON MURUKU WITH ONION AND RICEFLOUR

INGREDIENTS:

  1. Rice flour-6 cups
  2. Big onion-1
  3. Green chili paste-3 teaspoons
  4. cumin-1 teaspoon
  5. Butter-1 table spoon
  6. Salt-to taste
  7. Ajwain/carom seeds-1/2 teaspoon
  8. Oil-for deep frying





METHOD:
>>>>>>>>
  1. Grind onion to very fine paste
  2. In a bowl mix all the ingredients with some boiling hot water and make fine dough
  3. Make into portions
  4. put the dough in muruku maker ,using ribbon muruku mould
  5. Make muruku in oil and deep fry
  6. Once it gets cooled ,store in air-tight container
  7. Will lasts upto a month

KARAM APPALU (TRADITIONAL RICE FLOUR CRACKERS)

These is a very old recipe which I learned it from mom,they are called as karam appalu or vadappalu which we make with many variations
INGREDIENTS:
>>>>>>>>>>>>
  1. Rice flour-6 cups
  2. Green chili paste-3 teaspoons
  3. Sesame seeds-1 tablespoon
  4. Cumion-2 teaspoons
  5. Moong dal-2 table spoons
  6. Salt-to taste
  7. Butter-1 tablespoon
  8. Turmeric-1/4 Th teaspoon
  9. Ginger garlic paste-1 table spoon
  10. Oil-to deep fry


METHOD:
>>>>>>>>
  1. Soak moong dal in water for 1 1/2 hours and drain the water
  2. Now Mix the flour along with other ingredients with hands thoroughly
  3. Boil 2 cups of water,it should have maximum boiling point,and add to the flour mixture
  4. Mix with spoon,and cool it,be careful while pouring the water
  5. Now mix with hands,adjust water consistency
  6. Mix the dough perfectly and divide into various lemon size ball
  7. Take a zip lock cover cut into squares and apply oil both sides
  8. Take the puri press and put one cover then place the dough ball followed by another cover,and press gently
  9. Remove the pressed one and place it in hot oil gently and deep fry
  10. Repeat the process for remaining.
  11. Oil should be in medium heat,so that they will fry to a nice golden brown
  12. Once done cool the crackers completely and store in air tight container
  13. Savoury crackers are ready to serve

GHATI (BESAN MURUKU)

As promised I am posting all the chat items .still lots of items are in my list to be posted,sure I will do it.

INGREDIENTS:
>>>>>>>>>>>>
  1. Besan/chikpea flour- 4 cups
  2. Pepper poder- 1 teaspoon
  3. Lemon juice- 2 to 3 table spoons
  4. Cumin-1/2 table spoon
  5. Salt-to tase
  6. Oil-for depp frying


METHOD:
>>>>>>>>
  1. Mix all the ingredients and make stiff dough
  2. fill the muruku maker with flour mixture,and press in hot oil
  3. Cook on medium-flame
  4. Once it cools down transfer to air tight container
  5. You can use this for chats, making ghati kadi.
TIP: After making deep fried snack items cool down them completely and then store them in air tight container,other wise they loose crispiness

BOONDI MIXTURE

INGREDIENTS:
>>>>>>>>>>>>
  1. Besan/chikpea flour-2 cups
  2. Rice flour-4 teaspoons
  3. Salt-to taste
  4. Oil-fordeep frying
OTHER INGREDIENTS TO FRY:
  1. Peanuts/ground nuts- 4table spoons
  2. Curry leaves-4 table spoons
  3. Corn chuduva-4 table spoons
  4. Thick poha-2 table spoons
  5. Ghati already fried-1 cup
FOR MASALA
  1. Black salt-1/4Th teaspoon
  2. Amchoor-1/2 teaspoon
  3. garlic powder-1/2Tea spoon(please checkout the powders lable)
  4. Red chili powder-1/8th teaspoon
  5. Garam masala powder-2 pinches

METHOD:

  1. Mix the besan flour with other and add water,mix well.
  2. Make batter of (fritters consistency) not too thick nor too thin ,it shuld be medium,
  3. The drops of besan should fall constantly in the oil
  4. Take the boondi maker(available in markets/Indian grocery store) add the batter mixture and make boondi
  5. Also fry the other ingredients and mix well along with boondi
  6. Now mix all the powders n a bowl together, and add to the boondi mixture
  7. Store in air tight container
  8. Remains fresh for 10 to 12 days.
  9. This is my self recipe,really tastes really good.
  10. You can use this for making chat,boondhi raitha
TIP: Use good quality of besan otherwise it asorbs excess oil

MURUKU (WITH ROASTED CHANADAL)

INGREDIENTS:

  1. Rice flour-1cup
  2. Roasted chanadal powder/putna powder-1/4Th cup
  3. Green chili paste-2 teaspoons
  4. Cumin seeds-1/4th teaspoon
  5. Unsalted butter-2 teaspoons
  6. Salt-to taste
  7. Oil-for frying
    METHOD:
    >>>>>>>>
  • Boil water to till it reaches maximum boiling point
  • Mix all ingredients in a vessel
  • Add the water and knead the dough
  • Place the dough in muruku maker
  • then press in the oil and deep fry
  • Store in air tight container

MURUKU

Mix all ingredients and make a fine dough,now the muruku maker,fill the dough,press muruku in hot oil and deep fry.

CORN FLOUR MURUKKU

Andhra recipes are very famous, that too more credit goes to traditional recipes,i want to share corn flour muruku with u,this muruku is entirely different from other muruku,which tastes soft and crispy.

Ingredients

Riceflour-2 cups,cornflour-1 cup,besan flour-1 cup,roasted groundnut/peanut powder-1 cup,ajwain/vama-1/2 teaspoon,red chili powder- to taste,turmeric,ghee/un salted butter-3 tea spoons,salt-to taste

Process:
boil hot water and keep a side mix all the ingredients along with hot water make a firm dough,fill in the muruku maker,make muruku and deep fry in oil.
