- Egg plant long variety( hansel)-2
- Finely chopped onion-1 cup
- Finely chopped tomato-1 cup
- Oil- 1 table spoon
- Ginger garlic paste-1/2 teaspoon
- Peanuts-2 table spoons
- Mustard seeds-1/2 teaspoon
- Cumin seeds-1 teaspoon
- Dry coconut powder- 2 to 3 teaspoons
- Dhaniya powder-1 teaspoon
- Sabji masala-2 teaspoons
- Red chili powder-1 1/2 teaspoon
- Salt -to taste
- Cilantro-2 table spoons
- Turmeric-1/4th teaspoon
METHOD:

- Heat oil in a pan and make seasoning.Now add ginger garlic paste and onion
- once onion turns nice brown add eggplants,stir well and close lid.
- this variety of egg plants cook much faster so keep an eye on it.
- now add the tomatoes and cook well.
- Add masala, dhaniya powder,turmeric,red chili powder salt,coconut powder.mix well cook for few minutes,garnish cilantro.
- Enjoy with steamed rice.
