GRAVIES:Mirchi ka salan(Spicy chili gravy)Raitha katta meeta(Yogurt served with veggies and raisins)
SALAD: Onion veg salad

1.Ingredients for Veg Jeera Rice
ANDHRA RUCHULU-MOGHLAI VEG THALI |
- Cooked Basmathi rice-3cups
- Carrot chopped Julienne style-1
- Capsicum chopped Julienne style-1/2
- Mint-2tbs chopped
- Coriander leaves chopped-2tbs
- Food color green and yellow-2 to 3 drops of each color
- Shahi jeera-1/2ts
- cumin/jeera/jilakarra-1tbs
- Biryani masala-1/2ts
- Oil-2tbs
- Salt-to taste
- Heat oil in a pan add jeera and shahijeera fry well
- add veggies, leaf greens saute for 2min,should remain crunchy
- Add biryani masala,salt ad finally rice fry well spread colors and mix gently to apply only on few portions of the rice particles
- mild jeera rice is ready to serve
- Banana pepper deseeded and chopped into two-3
- Peanuts-1/2 cup
- Sesame seeds-2tbs
- Dry coconut powder-3tbs
- Jaggery-2ts
- Curd-1/2 cup
- Cloves-4
- Cinnamon stick-inch
- Dhaniya powder-1ts
- Red chili powder-1/8th ts
- Tamarind paste-2tbs
- Salt-to taste
- Oil-4tbs
- Turmeric-1/8th ts
- Roast peppers to light brown with 2 teaspoons oil and Set side
- Dry roast peanuts,sesame seeds,coconut,cloves,cinnamon and blend along with curd
- Heat oil in a pan add onions and fry till light brown add remaining powders,1/2 cup water and roasted peppers
- Now add blended paste some water cook till oil oozes out
- add tamarind paste,jaggery salt and simmer for 15 minutes mix in between
- Rich mirchi ka salan is ready to serve
- Cooked basmathi rice-2 cups
- Fresh curd-2 cups
- Grated carrot-1ts
- Oil-1ts
- Ghee1ts
- Mustard seeds-1ts
- Mash the rice with hands mix salt curd and grated carrot
- Add seasoning and mix with rice
- serve chilled
- add some curd and mix while serving
INGREDIENTS FOR RAITHA KATTA MEETA
- Curd beaten-2 cups
- Mint-1tbs
- Coriander chopped-1tbs
- Finely chopped tomato deseeded-1/2 cup
- Finely chopped onion-2 tbs
- finely chopped green chilis-2
- Finely chopped pineapple-1ts
- Raisins/kissmiss-3tbs
- Salt-to taste
- Mix all ingredients in a bowl and serve
- Onion chopped length wise-1/2 cup
- Finely chopped carrot-1tbs
- Finely chopped capsicum-1tbs
- Finely chopped mint-2ts
- Lemon juice-1/2 ts
- Salt-to taste
- chat masala-1/2 ts
- Mix all ingredients in a serving bowl
