VEGGIE CROQUETTES

INGREDIENTS:

  1. Boiled and mashed potatoes-3 cups
  2. Grated carrot-1/4th cup
  3. Finely chopped green bell pepper-1/4th cup
  4. Chopped coriander leaves-4 tbs
  5. Minced garlic-1 ts
  6. Chat masala-1ts
  7. Red chili powder-1ts
  8. Salt-to taste
  9. all purpose flour or maida-3 tbs
  10. Corn flour-3tbs
  11. Roasted vermicelli made into coarse powder-1 cup
  12. Oil-for deep frying

  1. In a bowl combine all ingredients except oil and vermicelli powder
  2. Mixture should be hard not too soft ,other wise croquettes will break
  3. Now divide the portions into various balls
  4. Take each ball and shape like a oval and refrigerate for 2 hours
  5. Now take each oval shaped ball and roll in the vermicelli powder
  6. Remove excess powder by rolling i hand
  7. Repeat same process for the remaining balls and deep fry till done
  8. It looks light weight whe completely fried
  9. Yummy and delicious croquettes are ready to serve with tomato sauce
