- Chopped onion-1/2 cup
- Chopped brinjal-1 cup
- Chopped tomato-3/4Th cup
- Cilantro-2 table spoons
- Red chili powder-1 teaspoon
- Salt-to taste
- Garam masala-2 teaspoons
- Turmeric-pinch
- Ginger garlic paste-1/2 teaspoon
- Oil-3 table spoons
- Cumin and mustard-1/2 teaspoon
- Curry leaves-4

- Heat oil in a pan and make seasoning
- Add onions and fry well
- To this add ginger garlic paste and brinjal
- Fry till brinjals gets half cooked
- Now add tomato pieces and cook until done
- Now add turmeric,red chili powder,garam masala powder,salt
- Garnish with cilantro
- Goes well with rice and pulka
