ANDHRA THALI
Gongura senagapappu kura

INGREDIENTS FOR GONGURA CHENAGAPAPPU KURA:
- Gongura/sorrel leaves-6cups
- Chenadal-1/2 cup
- Garlic -8pods chopped into 2 halves
- Methi/fenugreek seeds-1/2 ts
- Salt-to taste
- Green chilis-3 chopped
- Oil-3 ts
- Cumin mustard-1 ts
- Heat oil in a pressure cooker pan and make seasoning add garlic and fry till golden brown
- Now add leaves,chenadal and fry for minute
- Now close lid and cook for 3 to 4 whistles or until done
- Goes wel with rice and roti

- Cauli flower florets-3 cups
- Onion chopped-1 cup
- Tomatoes chopped-3
- Yogurt-1/4th cup
- Ginger garlic paste-2ts
- Lemon juice-2 ts
- Red chili powder-1ts
- Turmeric-1/4th ts
- Salt-to taste
- Garam masala-1ts
- Red food colour-2 drops (optional)
- Dhaniya powder-1 ts
- Oil-3 tbs

METHOD:
- Heat oil in a kadai and fry gobi till nice brown now add the masala and cook till it becomes dry on medium flame to avoid burning

- Chopped methi leaves-2 cups
- Green chena-1/2 cup
- Garlic chopped-2 tbs
- green chilis-2 ts
- Salt-to taste
- roasted sesame seed powder-2 ts
- Oil-1 tbs
- Cumin mustard-1ts
- Heat oil in a pan add seasoning and garlic fry till done
- Now add methi leaves and fry for 5 minutes
- Nw add boiled chena salt and green chlis and cook for 5 minutes
- Finally add sesame seed powder and mix well
- Healthy methi chena curry is ready to serve
- Bitter guard chopped into circles-1 cup

METHI SPRING ONION ROTI
INGREDIENTS:
- Wheat flour-2 cups
- Chopped methi leaves-3 tbs
- Chopped spring onion-3 tbs
- Grated carrot-4 tbs
- Cumin-1 ts
- Green chili paste-1ts
- Choped coriander leaves-2 ts
- Crushed dhaniya/ccoriander seeds-3 ts
- Salt-to taste
- Red chili powder-1/2 ts
- Ginger garlic paste-2 ts
- Oil-
- Sesame seeds-1 cup
- Except sesame seeds combine all ingredients in a bowl add water and knead to a soft and pi liable dough apply oil and cover the dough with a damp cloth
- Set a side for 1/2 hour
ANDHRA RUCHULU-METHI SPRING ONION ROTI |
- Now divide the dough into various portions
- Now take each portion and press in sesame seeds both sides and roll like roti
- Fry on tawa both sides with little oil until done
- Repeat the same process for remaining rotis and serve hot with curry or pickle
PROTEIN RICH STIR FRIED TOFU WITH VEGGIES-CHINESE STYLE
INGREDIENTS:
- Tofu-1 block chopped into 3 inches blocks
- Bell pepper green diced-1/2 cup
- Cauli flower florets-1 cup
- Minced garlic-1 tbs
- Olive oil-1 tbs
- Soy sauce-2 ts
- Allin one suce-2 ts
- Sweet chili sauce-1 ts
- Salt-to taste
RICE PUDDING-RICE KHEER
INGREDIENTS
- Rice-1/2 cup
- Organic whole milk 2 cups
- Almond powder-1 ts
- Sugar -1/2 cup
- Kalakand or khoya-2 ts

- Cook rice with 2 cups of water
- When the rice is cooked add milk and bring to boil
- When it comes to kheer consistency add the remaining ingredients and cook for 3 more minutes
- Serve hot or chilled
MIXED VEG ROTTINI
INGREDIENTS
- Rotini-1/2 pack
- Mixed vegegies-1/2 cup
- chopped onion-1/2 cup
- Chopped tomato -1 cup
- Cilantro-2 tbs
- Roasted sesame seed powder-2 ts
- Ginger garlic paste-1/2 ts
- Sabji masala-1 ts
- Dhaniya powder-1 ts
- Red chili powder-1 ts
- Oil- 2tbs
- Salt-to taste
- Coriander leaves-3 tbs
- Sour cream-
ANDHRA RUCHULU-MIXED VEG ROTINI |
- Cook rottini according to instructions strain and set a side
- Now heat oil in a pan add ginger garlic paste,onion
- Add cooked veggies and tomatoes and fry till tomato turns soft
- Now add powders and cilantro fry for 2 more minutes
- Add cooked rotinni mix and cook for 5 more minutes
- Now serve hot topped with sour cream
